Pure Sheeps Cheese from the Camprodon Valley (Catalunya) made with pasteurized sheep's milk, with compact curd processing and very low humidity. Hard pressed and skin color can vary according to the season: from yellow to gray.
The taste varies according to the time of maturity. A 30-day cured cheese tastes very smooth, with a sweet finish. From 60-90 days on the cheese becomes more solid.
Hard skin covered and matured at least one month.
