Parèntesis is made from two grape varieties: White Grenache vines are planted in earthy soil with white pebbles and Pedro Ximénez vines in clay soil and Llicorella, a soil type which is a mix of slate and quartz, in plots with a little altitude providing freshness and acidity to give the wine life.
Parentesis wine is achieved by tending the vines for about 15 years without chemical treatment. They are found in the village of El Lloar (Priorat, Tarragona) at an altitude of between 200 and 220 meters. Thanks to small plots with different soils and different inclinations the grapes obtain different processes of ripening.
85% White Grenache - 15% Pedro Ximénez
Each variety is vinified separately until its final blend. Once harvested the grapes are kept cold for 2-3 days to extract all the primary aromas. Then follows the method of fermentation called skin contact, ie, letting fermentation take place with the skins prior to pressing (formerly a method used in farms and farmhouses) in this way you give the wine more body and structure in order to be able to select the taste when pressing.
Aged in French oak barrels resting on the bedrock of the cellar where humidity causes malolactic fermentation spontaneously and naturally. After approximately 6 months, and only because of experience and feel, the day is chosen for blending in stainless steel vats where it will be for 15-20 days during which cold tartaric stabilization takes place.
Alcohol 13.5% vol.
